Keto Mini Eggplant Pizza

  • 1 organic medium eggplant
  • 4 Tbsp organic avocado oil
  • 6 tsp organic basil pesto
  • 1 spinach & feta chicken sausage
  • 4 oz Asiago or Parmesan cheese
  • OPTIONAL- 2 tbsp organic pizza sauce
  • Salt & pepper to taste

Slice the eggplant into 1/4 inch slices. Saute them in a pan with avocado oil. Flip over when slices begin to soften. When eggplant is cooked equally on both sides, spread a light layer of pesto on eggplant, top with cheese and sausage and cook till cheese melts. Serve immediately. NOTE: If you are not following Keto, you may also top with pizza sauce for additional flavor.

Chocolate Chip, Peanut Butter, Oatmeal Bars

  • 2 cups organic oats
  • 8 tbsp organic creamy peanut butter
  • 1 cup dark chocolate chips
  • 2 organic cage free eggs
  • 1 cup organic coconut sugar
  • 1 tsp organic cinnamon
  • 1 tsp vanilla

Preheat oven to 350. Mix all the ingredients in a bowl, place in a 8 x 8 baking pan. Bake for 35 minutes or until golden and firm. Cool for 10 minutes, cut in squares and serve while warm.
