This zesty and refreshing Cucumber Mint, Melon and Feta Salad is sure to be a crowd pleaser!
Ingredients
4 Cups organic watermelon, honeydew, and cantaloupe (or include your favorite melon), diced |
2 Cups organic cucumbers, diced |
1 oz feta cheese (organic if you can get it), finely crumbled |
1 Tsp organic lime (or lemon) zest |
2 Tbsp organic lime (or lemon) juice, freshly squeezed |
2 Tbsp o |
2 Tbsp organic avocado or extra virgin olive oil |
Salt (to suit your taste) |
1/4- 1/2 Tsp organic chili pepper or 1 serrano pepper, minced |
Instructions:
1- Chop Cucumbers
2- Dice Melons
3- Zest limes
4- Squeeze lime juic
5- Chop mint

Cucumber Melon Salad
Ingredients
- 4 cups mixed diced organic watermelon, honeydew and cantaloupe (or include your favorite melon)
- 2 cups diced organic cucumber, seeded if there are seeds
- Salt to taste
- 1 teaspoon lemon or lime zest
- 2 tablespoons freshly squeezed organic lemon or lime juice
- 1 to 2 tablespoons chopped fresh mint
- 1 ounce feta cheese, finely crumbled
- ¼ to ½ teaspoon Aleppo pepper or mild chili powder (to taste), or 1 serrano chile, minced
- 2 tablespoons extra virgin olive oil
Directions
- Chop up fruit and cucumbers
- Zest citrus and squeeze juice
- Combine all of the ingredients in a large bowl. Toss together just before serving.
